Please could I export the specific measurement data to Excel? For instance, exporting RGB color patches, reference XYZ values, and measured XYZ values?

All information is held in the .bcs profile, in an XML format.
You can import into Excel from there, as may users have already done.

The Target values are based on the defined target colour space, and can be defined mathematically.

No - as per the website info, ColourSpace DPS cannot work with .bcs profile files.
